Apple Oats Pancakes

These apple oat pancakes are a delicious treat. They are wholesome, made with simple, hearty ingredients, and without refined sugar. Great source of fiber, a tasty, healthy, and filling breakfast you need in the morning. I use a combination of oats and almond flour. Feel free to use flour of your choice, like whole wheat, millet, gluten-free, etc. Simply grind old-fashioned oats for oat flour.
INGREDIENTS
2 Apples
1 1/2 cups Flour
3/4 cup Oat flour
2 tsp Cinnamon
3 tbsp Unsalted butter
1/4 tsp Salt
1 tbsp Baking powder
1 tsp Baking soda
2 Eggs
2 tsp Vanilla extract
1 1/2 cups milk
INSTRUCTIONS
Peel apples and grate them.
Mix all dry ingredients (oats flour, almond flour, cinnamon, salt, baking powder, baking soda).
In a separate bowl, whisk eggs, then add melted butter, vanilla extract, and milk. Combine this mixture with grated apples.
Add dry ingredients to the wet ingredients.
Let the batter rest for a few minutes. Oats will soak up some of the moisture and pancake batter will thicken. Adjust the consistency of batter by adding more milk if needed.
In the meantime, heat a heavy cast-iron skillet/non-stick pan over medium-low heat, or heat an electric griddle to 320 degrees Fahrenheit. Lightly oil the surface of your pan with coconut oil, butter, or cooking spray.
For each pancake, pour ¼ cup of batter into the pan.
Cook for 1-2 minutes until pancake is lightly browned.
Flip the pancake carefully and cook for another minute.

Transfer to a plate and enjoy with a drizzle of pure maple syrup or natural honey.
