Pancakes are requested in my house at least once a week. They are great filling breakfast- prepared in just minutes. Store bought pancake flours are filled with inflammatory oils, refined flours, trans-fat, corn syrup and God knows what. I would like to share this easy pancake mixture that contains only 4 ingredients. It makes about 4 batches of pancakes, tastes great, and cost friendly.

INGREDIENTS
4 Cups Flour of your choice
3 tbsp Baking powder
2 tsp Baking soda
1 tsp Salt
INSTRUCTIONS
- Mix these 4 ingredients and store in an airtight container. It stays good for about 6 months.
- For 1 cup of this dry pancake mix add 1 egg, 1 cup of milk, and 1 tsp butter or oil.
- Mix wet and dry ingredients to make the batter for the pancakes.
- Don't over mix the batter and let it rest for about 10 minutes.
- Enjoy yummy pancakes guilt free!
Be creative and experiment with different types of flours like whole wheat flour, almond flour, oats flour, buckwheat flour, etc. I love to mix 2-3 different types of flours. Top it off with chocolate, sprinkles, fresh fruits and pure maple syrup or honey.
