Cottage Cheese Pancakes
These cottage cheese pancakes are hearty, filling, and such a delicious treat for the weekend! Made with simple, clean ingredients, they come together quickly and are packed with goodness. Perfect for a cozy weekend breakfast when you want something that feels indulgent but is still nourishing and satisfying.

INGREDIENTS
1 ½ cup Cottage cheese
4 Eggs
1 tsp Vanilla extract
2 tbsp Sugar (Stevia or Monk fruit)
1 tbsp Baking powder
1 cup Flour (I recommend ¾ oats and ¼ almond flour)
¼ cup Oil
INSTRUCTIONS
Combine the ingredients in the following order: cottage cheese, eggs, vanilla extract, sugar, baking powder, and flour.
Mix well each time you add an ingredient until everything is well combined.
Heat a griddle or pan over medium heat and lightly grease if needed.
Pour approximately ¼ cup of batter onto the hot griddle for each pancake.
Cook over medium heat until the pancakes are golden and cooked through, flipping once.
Serve with pure maple syrup or honey.
